The peculiarity of the baianense kitchen is the use of spices in almost all preparations. Other key ingredients are also found in the recipes of traditional dishes of the state of Bahia. The azeite de Dende is one of those typical ingredients . It is crafted from an oil palm and arrived in Brazil since colonization . This oil has African origins. Coconut milk is also used in large traditional dishes like moquecas and ensopados . These are seafood preparations decorated with coconut milk . This ingredient is found in other preparations such as the Cocada Branca e preta . It is , here , a dessert prepared with sugar cane molasses ( or black treacle is a viscous by-product of the refining of sugarcane or sugar beets into sugar) .
